A rainy day at home is a perfect day for a warm bowl of soup. It is the easiest way to heat up your body and fill up your stomach with many different nutritious vitamins. Here are 2 simple Chinese soup recipes that will satisfy you and keep you healthy with organic vegetables.

Chinese Watercress Soup

This family’s favourite and will provide warmth to your kitchen. It’s light, nourishing, and the ideal way to conclude every day of the week.

Ingredients

  • A whole chicken
  • 2 bundles watercress
  • 2 dried honey dates
  • 2 carrots, peeled and sliced
  • 3 dried jujubes (Chinese red dates)
  • 1 tsp salt, or to your preference

Heat the chicken and water to a boil, then stir or let it simmer for 15 minutes. After that start adding the carrots, mushrooms, honey dates, and jujubes. Bring the broth to a boil after the carrots have softened, then incorporate the watercress. Maintain the soup on a low to moderate heat for a further 20 minutes, slowly simmering and add in the salt to taste.

Pork Rib Soup With Radish

Simply combine all of the ingredients in a saucepan and allow it to simmer until it transforms into a traditional homey soup!

Ingredients

  • 500 grams of baby back ribs, cut into bite sized pieces
  • 2 white radish cut into big chunks
  • 3 slices ginger
  • A handful of goji berries
  • 1 tsp salt, or to your preference
  • 1 tsp white pepper
  • 2 stalks green onion, chopped for garnish

Submerge the pork ribs with cold water in a pot, then bring it to a boil with a medium-high heat, cook for 5 minutes until the pork ribs have changed colour. After that, add in the chopped white radish, ginger and bring that to a low heat and simmer for about 35 minutes with lid on. Then, season the soup with salt and white pepper and stir. Add in the goji berries and turn off the heat, letting the soup slowly cook with remaining heat. Sprinkle on top fresh chopped green onion to serve.
